Scout Chef Kitchen Presents: the S’MORES Edition!
S’mores are my most favorite dessert, ever. I never get tired of the classic s’mores recipe, but if you are looking for a couple of super easy ways to mix it up, check these out!
Side note: I highly recommend sticking with Hershey’s chocolate. They have perfected the soft chocolate bar that is literally designed to be the perfect consistency for your s’mores. Trust me – I have tried more high-end alternatives, and it just didn’t turn out as well.
Banana Boat S’mores
Ingredients
- 1 banana
- 1 heaping tablespoon chocolate chips
- 1.5 tablespoons mini marshmallows
- 1.5 tablespoons honey nut chex mix (bonus – it’s gluten free!)
Instructions
- Slice banana long-ways and push it down to help keep it open and upright (so you can stuff it with all the goodies!)
- Spoon in your chocolate chips, marshmallows, and chex mix
- Wrap in aluminum foil, keeping an opening at the top (this is a recipe that it is ok to let that steam out)
- Put packet on coals and cook 8-10 minutes (or, if you are at home, you can also throw in the oven at 350° for about 8 minutes)
Once the marshmallows are melted, take it out and enjoy with a spoon!
Autumnal S’mores Dip
I made my own pumpkin pie filling, but obviously you can use one from a can to simplify!
Ingredients
- 1 pkg. Mini Marshmallows
- 2-3 Hershey Bars
- 1 box Honey Graham Sticks
- Pumpkin Pie filling
- Cast Iron Skillet, 6-8”
Homemade Pumpkin Pie Filling Ingredients
Pro tip: do this at home so it is pre-made for your camping trip!
- 1/2 cup pumpkin puree, preferably homemade
- 1 large egg + 1 large egg yolk, beaten
- 1/4 cup packed light brown sugar
- 1 teaspoons ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground allspice
- 1/16 teaspoon ground cloves (literally a tiny dash)
- 1/4 teaspoon kosher salt
- 1/3 cup heavy cream
- 1/4 cup whole milk
Directions
- Put a layer of marshmallows into the skillet.
- Break the candy bars into pieces and spread around on the marshmallows.
- Dollop pumpkin pie filling around the skillet
- Sprinkle more marshmallows over the chocolate leaving some of the chocolate showing.
- Place on a grate over a campfire and let cook until the marshmallows become melted.
- Remove from the campfire and serve with the graham sticks.
